Roasted garlic is one of the best things to have on hand. It makes every single thing it’s on 10000000 times better. I’m a garlic lover to begin with, but roasting it just brings out this hidden hint of sweetness you don’t get from raw garlic. Now that I’m thinking about it, I’m missing some zeros over there.
- 2 heads garlic, cut about 1/4 inch off the top to expose the cloves
- 2 tsp olive oil
- A pinch of salt
Preheat oven to 400 degrees.
Drizzle oil over garlic, add salt and wrap in aluminum foil. Use a small ramekin to keep the garlic in place. Bake for 40-45 minutes or until nicely caramelized.
Refrigerate for up to 2 weeks or freeze.
